Cucumber Caprese Skewers

 

Heirloom tomatoes are divine this time of year; but nonetheless, I can't help but prefer this spa-inspired Caprese skewer that, instead, uses a refreshing and mild cube of cucumber! Alongside the crunch of basil, the richness of cheese, and the acidic pop of a just-ripe blackberry, the ingredients balance one another in calm, cool and collected style for your summer get-together.

Pool days and backyard barbecues will plead for a few of these bites.

Makes 18 skewers

2 cucumbers
1 package fresh baby mozzarella
1 large bunch fresh basil
1 pint blackberries
Black pepper, to garnish
Spicy honey, to garnish

1. Slice cucumbers into 1-inch thick rounds; then cut the edges of each round to form a square. Set aside.

2. Take a small knotted bamboo toothpick and skewer with one cucumber square, followed by a basil leaf, mozzarella ball, and blackberry.

3. Transfer to a serving plate. Drizzle spicy honey over the batch, and finish off with cracked black pepper.
