Lobster Gnocchi Mac & Cheese

Comfort food, come right this way. It’s been a doozy of a day (more in stories), and this cozy #dinneronawhim was the highlight. I made a mini version, outlined below, but you can double or triple based on your crew!

1/4 cup panko bread crumbs
1 tbsp butter
Pinch garlic powder
Pinch salt
2 mini lobster tails, steamed
1 cup gnocchi
Cooking spray
1 tbsp butter
1 tbsp flour
1/2 cup milk of choice
1 cup shredded cheeses of choice
Pinch white pepper
Pinch salt

Heat first 4 ingredients in a small saucepan over medium low heat, stirring until panko is golden brown. Remove from heat and set aside.

Place gnocchi in an air fryer basket and spray lightly with cooking oil. Cook at 380 for 8 minutes or until golden, shaking basket once or twice throughout.

To make bechamel: Melt tbsp butter in a pan over medium heat. Add flour and whisk to form a roux. Stir 3 min until golden. Whisk in milk and turn heat to medium high, whisking until boiling and thickened, about 2 minutes. Turn heat to low and stir in white pepper and salt. Add cheeses and stir until well combined. Remove from heat.

Add gnocchi and lobster to pot of bechamel and stir to evenly coat. Transfer to a small greased baking dish. Top with panko. Bake for 10 min at 350F and turn on broiler for the final minute.
