Chocolate Banana Pops

My favorite dessert during my college years in Austin was Bananarchy, a top-your-own banana pop food truck. Not only was the delicacy delicious — it was incredibly refreshing on a toasty day! This at-home rendition brings festive fun for the whole fam with red, white and blue sprinkles and treat sticks — but feel free to dip in your own favorite toppings, from salted crushed peanuts to coconut flakes. It’s the perfect Fourth of July cool-down. Save for this holiday weekend!

3 bananas, peeled and halved
8 ounces semisweet dark chocolate chips
6 treat sticks
1/3 cup chopped salted peanuts
1/3 cup shredded coconut
Assorted sprinkles

Line a baking sheet with parchment paper. Insert a stick into the end of each banana half and freeze for 5-10 minutes (or overnight). Heat chocolate in a microwave safe bowl in 30-second intervals, carefully stirring each time until chocolate is melted and smooth. Dip the bananas one at a time into the chocolate, using a spoon to add extra chocolate until covered. Immediately prinkle each banana with the assorted toppings (hurry, it hardens quickly!) and refrigerate for at least 20 minutes, or until chocolate has hardened. Store in freezer until ready to enjoy!
