Healthy-ish Coconut Puppy Chow

Sawyer turns two today! It feels like just yesterday when we brought him home for the first time or when we threw him the ultimate Hollywood Feed first birthday party. Today, since it’s just a Monday, we’re taking it easy — Sawyer will live his best life at Brown Dog Lodge daycare, and we will indulge in a new puppy chow recipe in his honor.

Though Sawyer obviously can’t join us in the chocolate chowing, we figured his fans could enjoy it on his behalf!

12 ounces whole wheat Chex cereal (about 1 box)
16 ounces dark chocolate
1/4 cup coconut oil
3/4 cup almond butter
2.5 cups finely shredded coconut
1.5 cups powdered sugar

1. In a small saucepan over medium low heat, melt coconut oil. Add dark chocolate and almond butter, stirring until the chocolate is fully melted. Remove from heat and allow to slightly cool.

2. In a large plastic bin or bowl with a lid, combine the cereal and dark chocolate mixture until fully coated, stirring gently to keep the cereal from breaking.

3. Stir in the coconut, coating as much as possible, followed by 1 cup of powdered sugar. Snap on the lid and shake, then taste and add more powdered sugar as desired. Transfer to a baking sheet and chill for 10 minutes in the fridge. Store in an airtight container for a week!
