Paleo Apple Pie Bars

 

Since Alex and I are going grain-free until the wedding, I yearned for a sweet supplement to our Valentine's Day. These paleo apple pie bars did the trick. All natural and totally sweet, the combination creates a satisfying dessert with a hot cup of tea (after a glass of wine, of course!).

Makes 12 bars

2 cups pitted dates
1/2 cup dried apple rings (recipe below)
1/2 cup raw almonds
1/4 cup raw hazelnuts
2 tablespoons coconut oil, melted
2 tablespoons cinnamon

1. Preheat oven to 225 degrees, Line two baking sheets with parchment paper. Use a mandolin to slice 1 cored apple into 1/8-inch slices. Place in oven for 75 minutes, turning the baking sheets halfway through.

2. In a food processor, blend dates, apple rings, almonds and hazelnuts until broken down into a well-combined mix. Transfer to a medium bowl and stir in coconut oil and cinnamon.

3. Place "dough" on a parchment paper-lined backing sheet. Pat down to a 1/2-inch thick rectangle.

4. Refrigerate for at least one hour before cutting into bars. Keep refrigerated until ready to serve!
