Poké Bowl Bar

Poké Bowl Bar

The Hawaiian poke (pronounced “poh-ké”) bowl has been part of Hawaiian culinary tradition for centuries, but the trend is now taking off through fast-casual pop-up poke spots from LA to NYC. And now, it's about to pop up in your dining room!

Sweet Potato Sunrise Muffins

Rise and shine, sweethearts! Lately, I've been re-evaluating my morning fix, especially after cleaning too many egg pans and smoothie blenders instead of being productive with work or a workout regimen. At the moment, nothing seems to beat an energy-packed paleo bite that solely requires a pop in the microwave and a complementary cup of coffee. Plus, the filling and fulfilling recipe aligns with the #weddingdiet. I can't wait to hear what y'all think!

Thanks to Adam Stowe for the recipe recommendation!

1/2 cup mashed sweet potato, cooled
1/2 cup shredded coconut

Lean Turkey + White Bean Chili

Sunday is approaching; and with the big football game comes a typically big menu. Since I do not typically get distracted by the play-by-play football technique (I'm more personally drawn to the commercials and halftime entertainment), I'm more easily distracted by the food and beverage offerings.

Understandably for most, healthy habits aren’t top-of-mind on game day; but with less than four weeks until the wedding day, I’m determined to devise dishes that feel festive without the guilt.

Here's my and Alex's favorite chili recipe that is super healthy and satisfying. I hope it makes your Super Bowl a true success, no matter which team takes the championship!

Serves 4

1 teaspoon olive oil
1 pound ground lean turkey
1 15-ounce can diced tomatoes
1 15-ounce can white beans
1 12-ounce can low-sodium chicken broth
1 teaspoon dark chili powder
1/2 teaspoon cajun seasoning
1 teaspoon fresh oregano, diced
1/2 cup low-fat mozzarella
1 avocado

1. In a large pot, heat olive oil over medium heat. Add turkey and cook until cooked through, approximately 5 minutes. Drain turkey in a colander and return pot to stovetop.

2. Add turkey back to pot, along with drained beans and diced tomatoes. Stir in spices and chicken broth. Bring to a low boil, then reduce heat to medium-low. Simmer for 15-20 minutes, until tomato broth thickens. Taste, and adjust seasonings accordingly.

3. Serve in large bowls with diced avocado and mozzarella.
