Slow Cooker Pesto Chicken with Barley + Lentils
Believe it or not, this past month marked my first slow cooker experience. I'm so acclimated to "throwing together" the ingredients in my kitchen for Chopped TV-style method of making dinner. This beautiful, bright and rich recipe, in contrast, exemplified ease -- plus, it's the perfect entrance to fall.
Apple, Fig and Pistachio Salad
I especially love when a particular season or state of mind is told through salad topping choices. A salad's dependence on produce is primary, and the colors of fall produce are particularly wonderful on a salad like this one! An almost-shaved apple, fresh figs and chewy yet decadent pistachios stud the layers of this salad. Tossed in a simple vinaigrette, the rustic textures of autumn take center stage.
Smashed Red Potatoes
If you've never had smashed potatoes, you'll quickly see what you've been missing! A crisp exterior with an interior that melts in your mouth, this recipe adds irresistible flavors of garlic and parmesan. Plus, the presentation is gorgeous (and the red potato matches the Supper Club spread quite nicely!).
Spiced Popcorn + Beer Flights
When it comes to choosing one dish or one drink choice at a restaurant, I struggle to make the right choice. I always opt for group gatherings and shared plates to allow myself to taste and try a variety rather than confine myself to one flavor profile or texture. You can therefore imagine why I become giddy when seeing a beer flight option on tap room menus!
